Cucumber, Mango, and Red Onion Salad


This is one of those recipes that doesn't really have exact quantities. As a starting point, you can use equal amounts of cucumber, mango and red onion, but if you happen to have more of one thing or if you especially like one more than the others, then feel free to change it up!

No need to peel or deseed if using English or Persian cucumbers. With thicker skinned cucumber though, you may want to peel.

There you go! A super simple salad that looks beautiful and tastes even better!


Cucumber, Mango and Red Onion Salad
Adapted from Chez Panisse Vegetables by Alice L. Waters

Combine in a medium size bowl:
English or Persian cucumbers, thinly sliced (no need to peel or deseed)
fresh mango (preferably Ataulfo), peeled, thinly sliced
sweet red onion, thinly sliced

Season to taste with:
freshly squeezed lime juice
salt

Garnish generously with:
cilantro leaves
