Savoy Cabbage and Apricot Stir Fry


This is fast and easy. Just don't overcook the cabbage. It should still have a crisp bite. The apricots add a nice tang.


Savoy Cabbage and Apricot Stir Fry
Serves 5-6 as a side

Prep:
1 head Savoy cabbage
Cut in quarters thru the core. Rinse and drain well. Trim off core and any thick, tough ribs. Cut each quarter crosswise into 1/4" wide strips.

Heat wok on high. Coat with oil, and stir-fry for 30 seconds:
2 garlic cloves, peeled, crushed with back of knife
handful finely diced elephant garlic OR thinly sliced red onions

Add and stir-fry until just tender-crisp (don't overcook):
prepped Savoy cabbage
Salt to taste

Turn off heat, add and toss a few times in wok:
3-4 fresh apricots, pitted, cut into 1/2" thick wedges

Add:
Squeeze of fresh lemon juice

Do a final taste test and adjust salt and pepper if needed.
