Chocolate Cherry Pie Ice Cream
Standing in the grocery store checkout line, I spied the latest edition of Women's Day (ugh, am I really getting that old?). Luscious ice cream plastered on the cover. Quick perusal of a Black Cherry Ice Cream recipe inside. No-churn, no less!! Came home, opened the frig, grabbed some leftover cherry pie filling. Then went to the pantry for a big box of shaved chocolate (that's a whole 'nother story) and went to work.
Super Easy No-Churn Chocolate Cherry Pie Ice Cream
Makes approx. 1 1/3 qts

In a medium bowl, stir together:
1 can (14oz) sweetened condensed milk
1 tsp vanilla extract
In a large bowl, using an electric mixer, beat on high until stiff peaks form:
2 cups heavy whipping cream
1 can (14oz) sweetened condensed milk

With a rubber spatula, gently fold whipped cream into condensed milk mixture, along with:
1 cup shaved chocolate pieces or 4oz of bittersweet choc chunks (about 1 cup)
Spoon half of the whipped cream/condensed milk mixture into a 1 1/2 qt freezer safe container. On top of that, spoon half of:
1 can (21 oz) cherry pie filling
Use a knife to swirl the cherry pie filling through the whipped cream mixture. Spoon the remaining whipped cream mixture on top, followed by the remaining half of cherry pie filling. Again, use the knife to swirl the cherry pie filling through the whipped cream mixture. Cover with waxed paper and place lid on top. Freeze till set, 4-6 hours. Then, go ahead and treat yourself after all that hard work!
