Quick and Easy Coleslaw


This quick and easy coleslaw is perfect for busy summer days when you don't want to spend a ton of time preparing food and you want something cold and crunchy to offset the heat.

Buy pre-shredded bags of cabbage and carrots and mix the dressing directly in the serving bowl to further cut down on prep time and dish-washing!


Quick and Easy Coleslaw
Serves 4-6

In the bottom of a large serving bowl, whisk together:
3/4 cup mayonnaise (165g)
1 1/2 Tbs sugar
1 1/2 Tbs apple cider
1/2 tsp celery seed or celery salt or substitute 1 tbsp minced celery tops

Add to bowl:
12 oz/350 g (6 cups) packaged coleslaw mix, or make your own with a combination of shredded cabbage and shredded carrots
handful of roughly chopped herbs (parsley, dill, cilantro, thyme, etc.)

Toss to combine. Taste and season with salt and pepper if needed. Pop into refrigerator to chill a bit or serve immediately.


Try this:

Depending on your mood and how much time you have, spiff up the slaw with:
chopped nuts
dried fruits
matchsticks of fresh fruit - apples, firm peaches, pears, mangoes
