Adrienne's Nutty Granola
If you like your granola nutty, you'll love my friend Adrienne's recipe!
Makes approximately 3 lbs of granola
Preheat oven to 275°F.
In a large mixing bowl, combine by weight:
8 oz slivered or sliced raw almonds
8 oz raw pumpkin seeds (pepita)
4 oz raw sunflower seeds
16 oz old-fashioned rolled oats
In a small microwaveable bowl, mix and melt:
1/4 cup honey (84g)
1/4 cup coconut oil (56g)
2 tablespoons maple syrup
pinch of salt
Pour honey mixture over dry ingredients and mix thoroughly. Spread evenly between two parchment-lined half-sheet baking pans.
Bake at 275°F for 1 1/2 hours. Turn off oven. Leave in oven overnight. Next morning, transfer granola to a large airtight container and add:
4 oz roasted shelled pistachios
4 oz dried blueberries
