Cucumber Raita

Cucumber Raita
Makes 2 cups

Wash, partially peel, cut in half lengthwise and scoop out seeds. Medium grate:
1 cucumber (any kind)
Toss with
1/4 tsp kosher salt
Set grated cucumber in sieve over a bowl and let drain for 30min to one hour. Lightly squeeze grated cucumber to remove any excess water. Then place in a medium size serving bowl and mix with:
2 cups yogurt (whole, low-fat, non-fat all ok)
1 tbsp chopped mint leaves 
1/2 tsp ground cumin

Taste and adjust to your liking with additional
salt and pepper
squeeze of fresh lemon juice
